Miss Darlene's Macaroni & Cheese
1 Quart 1/2 & 1/2
2 lbs.large elbow macaroni
1 1/4 sticks of butter (separated)
1/2 cup flour
1/4 lb. of grated cheddar cheese
1/4 lb. of grated jack cheese
1 tsp. salt
1 tsp. pepper
1 Tbl. Worcestershire sauce
1/4 cup bread crumbs
Make a roux by meling one stick of butter in a large saucepan over medium/low heat. Be careful not to brown the butter with too much heat. Add flour by stirring with a wooden spoon . Cook for 5 minutes over medium heat, stirring constantly.
Add entire amount of 1/2 and 1/2. Stir into Roux until thickened. Add Worscetshire, salt and pepper. Mix together, turn off heat and cover white sauce until ready to assemble casserole.
Begin with a large casserole dish or large mixing bowl. Start with a layer of white sauce in bottom of dish. Then, layer with cooked macaroni, both cheeses, salt & pepper, then start again with a new layer of white sauce. continue this pattern until all pasta is used or serving dish is full.
Place dish in 350 degree oven for 40-50 minutes.
Prepare topping to place on top of casserole for last 20 minutes of cooking.
Melt remaining 1/4 stick of butter in saucepan. Mix in bread crumbs stirring until the crumbs absorb the melted butter. Carefully (it's hot) take the breadcrumb mixture and spread over top of macaroni, and return to oven.
Remove from oven and let cool for 10-15 minutes. Serve hot and enjoy!
Palmdale Slim's Oven Fried Chicken
Preheat oven to 400 degrees. Spray roasting pan with olive oil spray.
1 Whole cut-up Chicken or Best of Fryer
2 Cups Flour
1 Cup Plain Breadcrumbs
1 1/2 tsp. Honey
1 Tbl. Salt
1/2 Tbl. pepper
1 Tbl. Garlic Powder
1 Tbl Onion Powder
1 Tsp Oregano
1 Tsp Thyme
1 Tsp. Cumin
Clean Chicken and trim Excess Fat.
Combine flour, breadcrumbs, and seasonings. Put in sealable Quart sized Plastic Freezer bag and mix thoroughly.
Beat eggs and mix in honey for egg wash. Whisk eggs and honey until the mixture is combined.
Take each piece of chicken and dip into egg wash until coated with mixture.
Place each piece in the bag with the Flour/Breadcrumbs and shake bag until chicken is thouroughly coated. Repeat with each piece of checken and place in roasting pan.
Spray each piece of chicken on each side with Olive Oil Spray.
Bake in oven for 60-70 minutes at 400 degrees. 454-50 minutes into baking, turn over each piece and allow to brown for approx. 10 min. Turn over on original side for remainder of time in Oven. Pieces should be golden brown and Crispy.

Killer Green Beans
1 1/2 lbs. of Fresh Green Beans
1 cup of chopped Salt Pork (slice into small 1 inch strips)
1 cup of diced white onion
1 1/2 cups of chopped red peppers
1 cup of white wine (not cooking wine)
2 cups of chicken stock
1 Tbl. salt
1 Tbl. garlic powder
1 Tbl. Onion Powder
1 Tsp. Cumin
Rinse beans and snap. Bring pot of water to boil in small stock pot.
Place prepared beans in boiling water for 7-10 minutes. Parboil for less time if you prefer beans with more crispness.
After parboiling, place beans in cold water to stop cooking. Set beans aside after draining.
Cook salt pork over medium high heat until brown, (5-10 minutes) scraping bottom of pot frequently. Add onions and peppers and continue to cook for 5-7 minutes.
Add 1/2 the chicken stock and 1/2 wine to mixture and allow liquid to reduce (3-5 minutes).
Add green beans, rest of liquid and seasoning. Bring to boil.
Reduce heat to low and simmer covered for 30-45 min. Beans should be slightly crisp--not soft when done.
Makes 4-6 servings.

Miss Darlene's Bread Pudding
1/2 cup butter, melted
11 cups stale bread, cut into cubes
2 cups sugar
3 cups milk
1 tsp. vanilla
1 Tbl. Ground nutmeg
1 tsp. ground cinnamon
1/2 cup coarsely chopped pecans (optional)
1 cup chocolate chips (optional)
Pour melted butter over bread in a 13" X 9" glass or metal baking pan. Toss bread to coat well. Bake at 350 degrees turning occasionally for about five min.
Beat together eggs and sugar until well blended. Add vanilla, nutmeg and cinnamon and beat well. Add milk in a steady stream, mixing constantly.
Pour mixture into same 13 X 9 pan. Add chips or nuts if desired. Cover with foil and let chill in refrigerator fore about 1 hour.
Bake at 350 degrees for 45-55 min.
Serve warm with whipped cream.
